As a rough guide:

Monday: 12 - 6 or 6.30
Tuesday: Wednesday, Friday: 10-6 or 6.30
Thursday: 10-9 (city centre only
Saturday: 10-5 or 5.30
Sunday: 1-5 (city centre only)

Some supermarkets are open until 8pm or 9pm. But a 24/7 shopping paradise Amsterdam is not.
